Spinach Artichoke Dip
slightly adapted from http://www.food.com/recipe/spinach-artichoke-dip-1209
1 cup parmesan cheese
1 cup mozzarella cheese, shredded
2/3 cup sour cream
1 cup cream cheese, slightly softened.
1/3 cup mayonnaise
1 (1o ounce) box frozen chopped spinach, thawed and drained
1 (14 ounce) can artichoke hearts, drained and chopped
2 tsp garlic, minced
Preheat oven to 375 degrees F (not necessary if using the dip warmer*).
Mix together sour cream, cream cheese, and mayonnaise. Add remaining ingredients, and stir to combine. Scoop into a 1.5 quart baking dish and bake for 20-30 minutes. Serve with tortilla chips, crackers, or bread.
Yield: 4.5 cups
*If using a dip warmer, make only half a recipe. Scoop into dip warmer and warm for 30-60 minutes, stirring occasionally.
