These days breakfast is a must in our household. It may be hurried at times, but crucial for the kids and you definitely don't want to see this Momma Bear get growly. Our standard fare is toast or porridge, with one "sweet breakfast" of pancakes or waffles allowed on weekends. I try to get creative with my porridge and today I thought I'd share this fall-inspired combo with you.
Don't let those chocolate chips distract you from the fact that this is truly a nutritious porridge. Pumpkin is packed with vitamin A. One cup of pumpkin puree contains over 200% of your daily recommended value of vitamin A. It is also a great source of vitamin C and fibre. Oatmeal is also a source of soluble fibre, which is thought to lower cholesterol.
Now here's my second admission: I'm not actually giving you a recipe today. Well, at least not when it comes to quantities. Porridge is such a matter of personal preference so I decided give you the list of my mix-ins, and you can get creative from there. There must be scientific research out there that supports a good dose of creativity in the morning. If not, you're at least getting a filling, nutritious breakfast to begin your day.
Pumpkin-Spiced Chocolate Chip Porridge
- cooked oatmeal of choice
- pumpkin puree (bonus points if it's homemade)*
- pumpkin pie spice (you can use just cinnamon, but I found the pumpkin pie spice kicked it up to the next level)
- brown sugar or maple syrup
- chocolate chips
Cook the oatmeal, mix in the pumpkin, spice, sweetener, and chocolate chips to taste. Enjoy!
