Maple Oatmeal Chocolate Chip Cookies
1 large egg
1/2 cup butter (room temperature)
3/4 cup maple syrup
1 tsp vanilla extract
1 cup all-purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup oats (can use rolled oats or quick oats)
1 cup chocolate chips
Preheat oven to 325F. Prepare a cookie sheet by lining it with parchment paper.
In a large bowl, lightly beat the eggs. Add butter and mix, preferably with an electric mixer. Gradually add maple syrup and vanilla. There may be small chunks of butter left after mixing, and this is okay, it will not affect the quality of the cookies.
In a medium bowl, combine the flour, baking soda, baking powder, and salt. Gradually pour the dry mixture into the wet ingredients, mixing by hand or with a mixer, until just incorporated. Add the oats and chocolate chips and stir these in by hand.
Drop balls of dough, one tablespoon at a time, onto the cookie sheet, leaving a 2-inch space between them. Bake for 15-17 minutes until golden brown at edges. Cool on cookie sheet for a couple of minutes, then transfer to a wire rack to cool completely.
Yield: Approximately 2 dozen
