Besides the grinding and chopping one has to do in the food processor/blender, this recipe is very easy to make.
1 head of cauliflower
1 cup ground almonds (grind 1.25 cup whole almonds in food processor/blender)
1/3 cup olive oil
1/3 cup grated parmesan
3 tbsp chopped basil
1 tbsp dried oregano
1 tsp salt
More grated parmesan
Preheat the oven to 400F and prepare a 3x4 muffin pan by greasing it with some cooking spray.
Chop the cauliflower into small florets. Pulse-chop the cauliflower into fine crumbs in the food processor or blender.
Combine the ground cauliflower with the rest of the "dough" ingredients and fold until completely mixed. Pack the mixture to the top of each muffin hole - the mixture will not rise in the oven. Top each mini-loaf with a sun-dried tomato and a pinch of grated parmesan.
Bake for 25 minutes.
Yields 12-14 mini-loaves
